For Mother: Pistachio & White Chocolate Chip Cookies

If you love your mother you will bake her these cookies for mothers day. If you’re like me and you live a few states away, then you can at least forward the recipe. She’ll love you forever (not that she doesn’t already).
I found this recipe over at Honest Fare a few months ago and have enjoyed baking these sparingly. I say that because they disappear rather quickly, and running 5 miles a day only goes so far. Trust me.

 These buttery cookies are punctuated with just the right ratio of salty pistachios to white chocolate chips. They’re guaranteed to please.

And a few notes:
-The recipe states that it yields 3 dozen. I’ve tried it several times and it seldom brings more than 2.5 dozen. Double the portions for  a bigger crowd.
-Salted, roasted pistachios work just as well
-I use instant oats and haven’t had any issues

Carpe Diem, Yango

Yango was delighted to receive homemade doggie muffins all the way from Oklahoma today. My mother-in-law made several dozen of these for a “Pupnic” event and we got some of the extras. I’m going to be totally honest here; I really want to eat one. They look so tasty! But I’ll be a grown-up and refrain, at least until my husband gets home. Then we can dare each other to eat one! So silly.

On a serious note, we did receive some bad news from the vet a few weeks ago. My twelve year old beagle has a malignant tumor that affecting his digestive tract. I won’t get into the details, but he’s ultimately only got a few more months to live. He’s still in high spirits and doesn’t seem affected by his ailing health, although I would expect as much from such a happy dog. Yango has been enjoying himself at the dog park lately, and will soon be on a home cooked diet.

Looks like he aims to integrate some Yoga into the week as well. Maybe not. 😉

From here on out we’re working on making sure he’s comfortable and happy until the end. With such a sweet pup, it shouldn’t be too difficult. 

My First Roasted Vegetable Galette

 Hello Friends,
This week I had my nose buried in cookbooks to find new recipes to spice up our weekly menu. I discovered and absolutely love Pam Anderson‘s Cook Without a Book: Meatless Meals. Fact: when your library book has 20 little shards of paper marking recipes, it’s time to purchase the book. So I did. And everyday I sit by the mailbox like some old hound dog cartoon character, patiently awaiting my package. When it doesn’t arrive, I lamentably drag my long sad face back to the house to renew my library book.
Pam Anderson provides master formulas to a number of different dishes. When you have the formula memorized, all you have to do is plug in your favorite ingredients. That’s exactly how I operate in the kitchen! And it’s such a practical application to cooking. Open your crisper drawer and plug those ingredients into one of these beautiful meals.
I’ve already whipped up her galette (if you’re new to this dish like me, it’s basically a pretentious open faced vegetable pot pie) in two different varieties. Monday was the first time I’d even heard of the dish. Tuesday was the first time I attempted the dish. At that time, my crust folding technique needed work. By Wednesday I had the recipe mastered in two varieties. My husband is a fan too, he hasn’t even noticed that these are vegetarian dishes.
Well, I’m sure he has by this point in the post…
