Did anyone else buy too many potatoes this Thanksgiving? I made enough mashed potatoes to feed a small army, and still had an entire bag of potatoes to boot. It’s not a terrible problem to have, if you ask me. They’re from nearby Palmer, AK, and they’re cheap.

Crock Pot Taco Chili
Well, winter has officially arrived in Fairbanks. We had 6+ inches of snow this last weekend, with an additional 3-6″ more forecasted for today. There are few things I enjoy more than watching fluffy snowflakes drift downward from the sky from the cozy comfort of my living room. When the snow stops falling and the baby turns to nap time, you’ll find me outside, shoveling our driveway, or sweeping snow off the front porch. After a day of snow-gazing and snow-shoveling, a warm bowl of spicy chili really hits the spot.


By the way, have I ever mentioned how much I love Mexican food? It may have something to do with being Mexican, but I fully attribute it to the savory flavors from South of the Border.
Around here, we eat Taco Salad and this Taco Chili at least once a week. We can’t get enough of it! This Crock Pot Taco Chili recipe is made with pantry and produce staples, and kept light by using ground turkey instead of ground beef. It’s the ultimate comfort food, and once you see how easy it is to make, it may become a weekly go-to recipe for you as well.


Orange Citrus Spiced Hot Toddy
The one thing I appreciated most about living in Oklahoma was experiencing a variety of winters. Some years the weather stayed temperate, with very few sufferably cold days. Other years we endured intense ice storms, or even blizzards. I was once snowed in at my office for three whole days! You never knew what you were in for until winter was on your doorstep.

This is our first year in Alaska, and the seasoned residents are telling us that we’ve had an unseasonably warm October. This time last year they had 10+ inches of snow on the ground.
Over the last few days, frost has whitewashed the landscape, acting as a herald of what’s to come. The grass isn’t looking as green, and I’m starting to realize that I won’t be going out without a jacket for a long time. Gulp.
My favorite winter activities are many, but none really come close to enjoying a Hot Toddy and a Christmas movie when the weather just won’t allow much else. I missed out on that last year while I was pregnant with Margot. This year, I’ll gladly drink responsibly.
